On The Bright Side

Let's face it there weren't many if any bright spot things to talk about in the Saints game but other than the game we had a great time. After nine months of doing our own thing the crew got together again. We had some great food and fellowship. The wife didn't go so we didn't get a chance to break out the new motorized cooler oh well maybe this week. Here's a great recipe that the wife came up with for the game I brought a big tray of it and it disappeared quick.

Jalapeno Popper Dip

5 Fresh Jalapenos diced

1 4oz can of diced Jalapenos drained

1 4oz can of diced Chiles

2 8oz blocks of cream cheese

1 8oz container of sour cream

1/4 cup of mayo

1 Packet of ranch dressing mix

3 cups of cheddar cheese

Mix all the ingredients together except 1 cup of cheddar cheese including the juice from the can of chilies. Put in baking tray and top with the last cup of cheddar cheese. Can be served hot or cold. I prefer hot I put the tray into the oven for 20 min at 350 and then toss it on the grill to reheat it. I like it served Tostito Scoops.
